I think I’m aging prematurely. When I first thought about what I love about this recipe, the phrase “busy weeknight” popped into my head. The idea of a “busy weeknight meal” brings visions of speeding home in my minivan to get dinner on the table for bouncing toddlers. Yikes. I’d like to think I’ve got a
few many years before that scenario describes my life.
Instead of that taboo phrase, let’s just say: you’re going to love this dish because it’s easy, and it’s quick. There. Now everyone, minivans or not, can get on board with this recipe.
Normally, I’m not a huge fan of spicy food, but this dish has just the right amount of kick. Its flavor comes from sweet orange juice concentrate and honey, spicy red pepper flakes, and bright orange zest.
All you have to do is whisk up the sauce, cook some chicken, add the sauce, and let it bubble away before you have dinner ready. I tried this a couple different ways – only using the orange concentrate, only using fresh orange juice, and increasing the amount of orange zest. I found the best combination was a good balance of the three. Too much zest, and your glaze will be bitter, no orange concentrate, and the flavor won’t be powerful enough. If you’d rather avoid juicing the fresh orange and save it for a snack, I don’t think your dish will be lacking, but I liked the little increase in the amount of liquid it provided to the glaze – the more, the better, in my opinion!
When you pour the sauce mixture into your hot pan with the chicken, it will bubble and foam up – stay calm and stir on. You won’t fully see the glaze-like texture until you turn the heat off, but I promise it’ll be there.
This would be great alongside some brown rice, quinoa, or just a nice big salad. If it’s 10 pm on a Tuesday, and you’re lazy like me, you’ll eat it with some raw broccoli, and be just as content. The leftovers were great on top of salad at work the next day – no dressing necessary!
Spicy Orange Glazed Chicken
Cook time: 10 minutes; Total time: 20 minutes

2 tbsp honey
1 tbsp frozen orange juice concentrate
1/4 cup fresh-squeezed orange juice (juice of 1 medium orange)
1 tsp orange zest, grated
1 clove garlic, minced
1/2 tsp grated fresh ginger (optional)
1⁄4 tsp salt
1⁄4 tsp red pepper flakes
2 boneless skinless boneless, skinless chicken breast, halves
1 tbsp olive oil
3 green onions, sliced for garnish
Combine the honey, orange juice concentrate, orange juice, orange zest, ginger, salt, and red pepper flakes in a small bowl. Whisk until well combined.
Pour the olive oil in a saute pan over medium heat. Place chicken in pan and cook until browned on 1 side, about 4 minutes. Flip the chicken breasts, and brown on the other side until cooked through (~4 more minutes).
Once your chicken is cooked through, pour the glaze mixture on top, and let it cook down for 2 minutes. When you turn off the heat, the glaze should be thickened.
Plate your chicken, spoon the glaze over the top, and sprinkle with sliced green onions for garnish.
