Pumpkin Spice Cookie Butter Oatmeal Cookies

If you’ve ever been in a Trader Joe’s during the fall, you may have noticed that there is quite the over-abundance of a certain squash, and squash-flavored things. Seriously, it’s a little absurd. They have Pumpkin Spice Oreos, Pumpkin Soup Crackers, and even Pumpkin Spice Body Butter. That last one is my favorite. Who decided that in addition to eating a lot of pumpkin in the fall, I should probably also smell like a pumpkin? They say the way to attract a man is through his stomach, so maybe this is just a whole new level; look out men of Chicago… just try and resist me as I walk by you smelling like a squash.

Jokes aside, I really do enjoy pumpkin, and pumpkin spice flavored things, but find the national obsession is a little confusing. Nevertheless, if it’s the only way to get these cookies, then by all means, bring on the squash butter.

Lemon raspberry bars are pretty much the ultimate summer dessert. Fresh lemony flavor screams warm weather, and turning the bars pink with a little fresh raspberry puree? Well, it just can’t get better than that. Over the course of the past two weeks I’ve made three different batches of these bars, and finally landed on a recipe I loved. Everyone has a different opinion about what a lemon bar should be. Should they be gooey or hold their form completely? Traditional shortbread crust or something different? More tart or sweet? Is your head spinning? Mine too.

A week before my college orientation I made the somewhat questionable decision to sign up for a wilderness pre-orientation program. Five days traipsing through the Appalachian Mountains with seven other incoming freshmen, and two upperclass leaders seemed like a fabulous idea at the time. That was before I met my 50 pound hiking backpack, and realized there is no such thing as a broken-in pair of hiking boots.

I did, however, earn the nickname “Martha Stewart” for my campfire cooking abilities. Given that the only things I remember making are rice flavored with onion soup mix and pizza in a a skillet, I’m not sure this was deserved, but I’ll consider it a foreshadowing step to my life now.

Strawberry Roses. An Incredibly easy way to make a romantic garnish!

Happy Valentine’s Day! I meant to get this post up earlier this week so you could make a bouquet of these strawberry roses for your Valentine, whomever that may be! However, life got in the way this week as it tends to do, and I’m just sneaking this post in at the last minute.

If you’re still looking for a Valentine’s Day project, or just want a way to add a little fanciness to your morning fruit bowl, look no further. Strawberry roses are incredibly easy to make, and are the perfect garnish to a cake, cupcakes, or simply your plate. I made these for the first time exactly a year ago as toppers to Nutella cupcakes (another recipe I’ll have to share with you eventually!).

There are a lot of step-by-step photos here, but as there’s really no recipe, I hope you’ll forgive the scrolling and just enjoy looking at the pictures. All you need is a sharp paring knife, and some strawberries and you’re set to go. The petals come to life from a series of cuts in the strawberry, starting at the bottom and moving up in layers.

For as long as I can remember, my family’s birthday cake tradition has been a cake named “Bathroom Rug Cake.” Appetizing, huh? Don’t worry, it’s not named for the taste – more for the look. The cake is so named because of the fluffy coating of fresh coconut across the entirety of the cake that resembles a white shag rug you might have lying on your bathroom floor.

Happy Thanksgiving! I hope this Thanksgiving found you surrounded with friends, family, and lots of good food. Thanksgiving is one of my favorite holidays; in recent years, it’s been a relaxed day with my sister, mom, grandmother and I in the kitchen whipping up a variety of courses throughout the day. Everything from stuffed mushrooms, to a pumpkin-shaped cheese ball, to pumpkin martini’s graced our table. Of course, there’s always quite a selection of pies as well: apple, apple cranberry, and traditional pumpkin are the staples for our Thanksgiving dinner. As a kid, apple pie was always my favorite, but recently this pumpkin pie has been seriously stealing the show.
